Dolly's Peach Chutney

Use fresh peaches in season or try as I did canned peaches.

1kg ripe fresh peaches/canned peaches chopped fairly finely
31/2 cups malt vinegar
2cloves garlic finely chopped
500g each of dates and raisins chopped small
1kg brown sugar
2 teaspoons cayenne pepper for a good hit
2tablespoons salt
100g preserved ginger Dolly uses the crystallised variety, I used the pink Japanese style to good effect.

For canned peaches put all in together and boil for 30 - 40 minutes stirring occasionally.

For fresh peaches boil in vinegar and garlic until soft then add the rest and boil 30 minutes stirring occasionally.

Put into hot jars. Makes 3ltres.
